Refreshing Mango Lassi Blended Drink

We’re fortunate that our 2 sons are really keen on fruit, Henry particularly. But I know for some parents getting fruit and veg into their little ones is not so easy. I thought I would share a simple recipe I created, which I’ve become obsessed with lately! If you’re looking for ways to mix up getting goodness into your little ones this summer I hope you like it.

If you follow me over on Instagram, you’ll have seen me raving about my Breville Blend Active blender now and again – I’ve owned it for years and I make everything from juices to smoothies with it – it is so easy to use and so quick to clean out – I often bypass my food processor to use it instead as it’s just so much easier.

Breville have recently bought out the Colour-Mix Family Blender which is a step-up model and includes a juicer for fresh citrus ingredients and whipping disk attachment – hello ice cream sundaes! It also comes with 2 large BPA-free, dishwasher-safe (600ml) bottles and 2 smaller (300ml) bottles, with sports lids – the boys immediately picked “their ones” – red for Henry and blue for George and I got straight to thinking of new recipes to put it to the test with.

Having enjoyed a Mango Lassi many a time after a meal at an Indian restaurant I thought it could be a great start to developing my recipe. The boys love mango and I wanted to put a refreshing twist on it to cool them down during this never-ending heat wave that we seem to be having!

Refreshing Mango Lassi Blended Drink

Ingredients

2 ripe mangos – I use tinned as it’s far less time consuming!

Sprig of lemon mint or normal mint

350 g low-fat natural yoghurt

100 ml coconut milk

100 g ice cubes

Honey (optional)

Method

Place the mango, mint, yogurt, coconut milk and ice into the blender and blitz until smooth. Add a little honey to taste if you prefer more sweetness – it couldn’t be simpler!!

This is a winning recipe in our house and using the blender couldn’t be easier – and it’s nice and quick to wash up too! To make this even more exciting for little ones add the mixture to a lolly mould and freeze for a few hours then enjoy – and far less sugar than shop bought!

We absolutely love the Breville’s Blend Active Colour-Mix Family Blender because it’s encouraged us to make new recipes up from things we would normally eat, and it makes cooking together fun. It’s a fantastic way of getting nutrients into the boys and us too. It takes up very little space and the sports cap lids mean that we can each take a refreshing drink to work/school for the day without making loads of mess!
